Stablebaselines3 integration with gymnasium

As discussed in #166 (closed) some packages are deprecated. Gym is an important dependency for stablebaselines3

Change gym for gymnasium as soon as this PR in SB3 is merged.

Goal:

• Check the migration guide for Gymnasium
• Identify breaking changes in eta_utility
• Propose solutions
