Update poetry to 2.0.1

Summary

Poetry released it's second major version.

Finally the behaviour of poetry lock is changed to use --no-update automatically. Old behaviour retains with poetry lock --regenerate

The commands poetry shell and poetry export are now outsourced to plugins.

Other changes don't matter for eta-utility.
